“Spaghetti” Pesto Delight
Pesto Ingredients:
- 2 Garlic Scapes or 4 cloves of fresh garlic minced- saute in 1 tsp of melted butter
- 3 cups Bok Choi/Swiss Chard/Spinach (pick a green that is in season)
- ½ cup Feta cheese
- ½ cup Grated parmesan cheese
- 1 handful of fresh basil
Directions:
Blend all ingredients drizzling olive oil while blending to get desired consistency.
“Spaghetti” Ingredients:
- 2-3 medium zucchini – sliced using a potato peeler
- 1 tbsp. of butter
Directions:
Melt Butter in large sauce pan. Toss in Zucchini. Cook for 2-3 min, just until warm and tender. Add pesto to zucchini in pan. Serve warm. Enjoy!
