Cooking Demo 2: Potatoes and Greens

Lean Green Potatoes


2   cups diced potatoes (the smaller the cubes the faster they cook)
3   cups  bok choy & swiss chard (discarding stems) – Chopped
1   small onion sliced
¼  cup olive oil
Salt and pepper to taste


Warm olive oil in pan, add diced potatoes.  Cook potatoes until almost done.  Add onions, bok choy, swiss chard, salt and pepper.  Cook on medium heat until greens become wilted and shiny.

*Note: for a spicy flavor, add a freshly chopped jalapeno
